Can anyone point me to a comprehensive list of iTunes commands? I have figured a few by looking at some other scripts. Also, has anyone already created a basic itunes control page they're willing to share?

If you haven't visited Doug's Applescript for iTunes I'd suggest you start there. Lots of illustrations on how to script iTunes.

The "comprehensive" list of commands is in the iTunes dictionary (via script editor). I put "comprehensive" in quotes because the dictionary doesn't really do much in the way of showing you how to use the commands.
